Most of us knew little of Ghost Kitchens until the recent surge of their use and demand due to the pandemic. These off-site facilities have helped restaurants for years meet the huge demand of delivery without taxing their staff and service at their home locations. The demand globally for food service delivery has more than doubled between 2014 and 2019 and is projected to create a global economy of $1 trillion by 2030.
